Citrus Marinated Flank Steak
This incredible recipe is from Dr. Jolene Brighten’s book Beyond the Pill.
Ingredients
- 3 tablespoons avocado oil 
- 2 tablespoons coconut aminos 
- 2 teaspoons fresh lime juice 
- 2 teaspoons apple cider vinegar 
- 3 cloves garlic, crushed 
- 1/2 teaspoon real salt (pink salt, Redmond’s real salt, or Celtic sea salt are all good options) 
- 1/2 teaspoon cumin 
- 1 tsp chili powder 
- 1 tsp dried oregano 
- 1/4 tsp ground paprika 
- 1/2 tsp dried thyme 
- 1 lb grass-fed flank steak 
Directions
- In a small bowl, whisk together the avocado oil, coconut aminos, lime juice, apple cider vinegar, garlic, salt, cumin, chili powder, oregano, paprika, and thyme. 
- Place the steak into a shallow glass or another non-reactive dish. Pour the marinade over the meat, ensuring it is entirely coated. Cover the dish and place it in the refrigerator overnight (or 6-8 hours during the day). 
- When you’re ready to cook the meat, remove it from the refrigerator and let it sit at room temperature for 20-30 minutes. 
- Set your pan or grill at high heat. When it’s hot, grill the meat for 4 minutes on each side. 
- Let the meat rest on a cutting board for at least 5 minutes before slicing it against the grain. 
- Pair with a green salad or roasted veggies to make it a balanced meal.
