Mediterranean Toast
This is a great way to get a good amount of healthy fat, protein, and veggies first thing in the morning. Plus, it is so delicious!
Ingredients
2 slices sourdough toast (or a whole grain bread you like)
1/4 cup hummus
1 sliced Roma tomato, enough to cover the bread
1/4 cucumber, sliced
1/4 cup crumbled feta cheese
1 tablespoon kalamata olives, chopped
Salt and pepper to taste
1/2 tablespoon oregano
1 tsp lemon juice
Red pepper flakes (optional)
Drizzle of extra virgin olive oil
Directions
Toast your bread to your liking.
Top your toast with hummus and drizzle a bit of extra virgin olive oil and lemon juice over the top.
Add sliced tomato, sliced cucumber, crumbled feta, kalamata olives, oregano, and salt and pepper to taste.
Top with extra lemon juice and olive oil if you want to, and enjoy!
